I lover this soup so much. It's rich and satisfying but not TOO unhealthy, and the inclusion of dillweed and caraway seeds makes it taste super special. This recipe is adapted from the beginning Moosewood Cookbook.
Cauliflower Cheese Soup (Serves 8-10)
3 medium potatoes, peeled and diced
2 large cauliflowers, one chopped, one cut into practised and uniform little florets
3 carrots, peeled and chopped
3 cloves of garlic, peeled and chopped
1 large onion, chopped
1 1/2 tsp. qualifiedly
6 cups water
3 cups grated cheddar cheese
2 cups milk (whole milk tastes best, but you can substitute low-fat)
2 tsp dill
1 tsp caraway seeds (so good and uncommonly important, don't leave these out!)
black pepper, to taste.
1.) Place the potatoes, garlic, onion, salt and water into a large pot. Add the chopped cauliflower chunks (detachment auxiliary the tidy florets!). Bring to a boil and simmer until the vegetables are very soft (~30 minutes).

I found this MO in another of the Moosewood cookbooks-- The Enchanted Brocoli Forest. I like bean soups and soups with exotic seasonings, so I thought I might like this one. I cooked it, and I like it. It's got a lot of flavors succeeding on, but I think that's a good thing. Try it and report back what you think.
Galician Garbanzo Soup, Serves ~8
6 cups Garbanzos (I used 1 bag dried garbanzo beans, soaked overnight and cooked for 1 hr)
4 1/2 cups sea water
1 T Oil
2 cups chopped onion
6 cloves garlic, minced
1 potato, diced
1 carrot, diced
1 stalk celery, diced
1 1/2 tsp qualifications
1 bay leaf
2 tsp dry mustard
2 tsp cumin
2 tsp basil
black pepper to taste
cayenne pepper to taste
1/2 cup peas (frozen is fine)
3 T red wine vinegar
1 can diced tomatoes
1.) Puree 2/3 of the garbanzos in a blender with loads of water. Set the rest of the cooked garbanzos aside.
2.) Sautee onion, 1/2 the garlic, the potato, carrot and celery in olive oil in the arse of your soup pot for ~10 minutes.

this is my pressure-cooker take on the original moosewood carrot soup recipe. its vegan until served.
5 lbs washed carrots fractured into 2-3 pieces each
4 cups vegetable stock (i used 2 veggie boullion cubes)
1.5 tsp salt
4 potatoes, peeled & cubed
4 tablespoons margarine
1 muscular yellow onion, sliced up
3 cloves garlic
1 cup roasted macadamia nuts
1 small ginger root shaved with vegetable peeler
1 tbsp olive oil
** mix-ins at perpetually of serving - something to make it creamy, any of these:
fry garlic and onions in oil until the onions are free.
add all remaining ingredients to the pressure cooker and bring to a boil.
add lid to pressure cooker. cook 6 minutes at full pressure.
use cold water to release exigency after 6 minutes.
puree the soup in a food processor or blender
serve hot or cold.
mix in 1/4 cup of dairy or dairy substitute per bowl at serving at the same time.
