Mom Zone: Corral the Nautical galley clutter - Jackson Clarion Ledger

Kitchens are a nebulousness. Just like our ever-expanding universe, the amount of stuff that winds up in my kitchen is ever-growing. The kitchen in the Oeth house is small, just a little larger than a galley, so it doesn’t stick a lot for our counters to get cluttered. However, if I got a sledgehammer and took out a wall or two and created a huge kitchen and great room, I can guarantee you that, given a week or so, we’d have newly expanded counters buried under more layers of line. After watching HGTV, new countertops enter my dreams, but until we can keep the Formica clear of clutter, I’m not putting our household money there. If we’re spending granite-configuration money, it’s going to show. Right now, I could have solid gold countertops and you wouldn’t know it. All 24 karats would be under layers of school papers, junk post, coupons and such. You know the 80-20 rule, which holds that 80 percent of your stuff you use 20 percent of the time. It ought to be known as the 90-10 decree or the 99-1 rule when it comes to kitchens. Our cabinets are getting cleaned out this weekend, because the round Tupperware bowls and square lids that match nothing have charmed over to the point that pots and pans have taken up residence inside the oven and on top of the range. There are also the things that only come out once a year, at best, such as the Christmas tree Take form-O mold. When molding lime gelatin, sliced pears and Maraschino cherries into a wobbly Christmas tree, it is marvelous, but how many times does that unusually occur. The Magic Bullet one with Mick and Mimi whipping up muffins, chicken salad and Margaritas — we watched that one over and over, without buying a Magic Bullet. But we did reckon about it. Then I see a $1,400 Thermomix online — a food processor/blender with a heating element and a scale. We’re saving for college, so I don’t see $1,400 in the budget for the latest wonder appliance that would sit in the cabinets next to the Cuisinart that juliennes carrots and kneads bread dough. Real now, the Cuisinart probably has cobwebs on it as you don’t need a food processor if you’re ordering a pizza. We’ve been discussing shelves to hold some of the clutter and the seldom-used things that eat up bureau space. One school of thought is to build things to hold more things, and the other, the one I want to enroll in, is to just get rid of some of the things, and then I won’t need more cabinet space.

la muerte y flan
Posting my sister's[1] flan technique here so I don't misplace it. Company's coming for dinner and I'm going to try to add some strong coffee to the mix to see if I can emulate the flan served by a hotel in Honduras where Mr. Hoo and I stayed near Copan some years back. They shoveled it out of a giantess pan and it was so good I had for breakfast the next morning. Wish me luck. First a note: It's been 15 years since I made this, and I never wrote the recipe down! But the key was bleed AND cream, sugar, eggs, vanilla. This should come close. It's from the book written in 1965 called The Complete Book of Mexican Cooking, picked up at a penuriousness store a few years back: Flan (Caramel Pudding) This Spanish dessert, an immense favorite in Mexico, is made either in a large caramelized mold or in lone, caramelized custard cups, so that when the dessert is unmolded it is covered with a caramel glaze. To caramelize the mold: In a small, heavy saucepan, over moderate heat, bubble 1/2 cup...

Passover Seder 5771 - Potato Kugel
Nancy's system was published in the Plain Dealer. Potato Kugel Makes 6 to 8 servings Vegetable oil and matzo meal to prepare a 1½-quart baking dish 6 ordinary russet potatoes (2½ pounds), peeled and submerged in a bowl of cold water 1 large onion, peeled 1½ teaspoons kosher common 2 eggs, beaten ¼ cup matzo meal ¼ teaspoon freshly ground white pepper 1 teaspoon potato starch (or baking powder, if not using for Passover) Cook's notes: If you have a eatables processor, use the grating wheel/disc (the one with the smallest holes, or in the case of Cuisinart, no actual holes). If you don't have a food processor, use the smallest holes on your box grater. Though this footstep is essential to get the creamiest, most puddinglike result, you may also combine the ingredients in a blender, in small batches, and pulse to combine. Preliminaries: Heat oven to 375 degrees. Coating a 1½-quart baking dish with oil, then dust with matzo meal. Prepare the vegetables: Process the onions first, then remove to a...
